THE PRIMISSIMO SPIRIT

PRIMISSIMO is a limited production wine. Born in the heart of Salento, in the south of Italy where sun and nature reign, this organic wine expresses the passion of a great chef for the living, the authentic, the pure emotion.

It is a blend of Negro amaro, a local grape variety characterised by its sunny fruitiness and welcome freshness, and the French winemaking tradition of ageing in oak barrels to reveal subtle aromas of sweet spices.

PRIMISSIMO embodies a return to basics: a wine made without compromise, with extreme attention paid to every stage, from the vine to the cellar. It is the reflection of a philosophy: respect for the land, for time and for the taste of good things.

AN ORGANIC WINE

PRIMISSIMO is organically grown and celebrates a viticulture that respects the environment and the natural rhythm of the vine. No synthetic pesticides, no chemical inputs: just the power of life, enhanced by exacting know-how and constant attention.

This choice of a clean, sustainable culture is not a trend, but a deep conviction – that the best wine comes from a healthy, preserved land, and from a sincere commitment to nature and to future generations.

FRENCH OAK BARRELS

The French oak casks chosen for maturing PRIMISSIMO are more than just containers: they play an active part in the birth of the wine. Carefully selected for their fine grain and their ability to enhance the aromas without overpowering them, these casks bring a refined aromatic complexity, combining subtle notes of vanilla, sweet spices and a light toasty touch.

The French oak respects the authenticity of the Negro amaro grape variety, while giving it an elegant structure and a long finish, in a perfect balance between tradition and contemporary expression of the terroir.

The Primissimo label is the result of a collaboration between my wife, Katherina, a decorator, and her daughter Maya, an art school student.

They were inspired by a splendid ancient mosaic depicting Dionysus, the god of wine and nature, riding a cheetah: a powerful and refined allegory that perfectly symbolises the balance between strength and delicacy that is characteristic of our wine.

The deep green of the background echoes the vine, the environment and hope: this colour, both earthly and celestial, links earth to heaven – as the saying goes, ‘green is the bridge between the world below and the world above’.

Grown and matured according to the principles of organic farming, Primissimo reveals a unique bouquet, capable of transporting you and stimulating the imagination. More than just a tasting experience, it’s a true sensory experience, carried by a soul and a spirit that invite you to dream.

THE ROOTS OF SALENTO

PRIMISSIMO comes to life in Puglia, in the very south of Italy.
The Salento, bathed in light and caressed by sea breezes, offers an ideal climate for growing Negro amaro, the region’s ancestral grape variety.

On 3.7 hectares of organically farmed land, the vines grow in clay-limestone soil, nourished by the sun and worked by hand.
This exceptional terroir gives the wine its structure and roundness, and a strong Mediterranean identity that is both wild and controlled.

Negro Amaro from a certified organic vineyard with a sustainable development approach.

Black cherries, wild berries, with a hint of nutmeg and vanilla on the nose.

Fresh and well-defined fruit. Delicate tannins give the wine a soft, mellow texture. Generous finish with notes of fresh herbs such as rosemary.

A wine that lends itself well to gastronomy! Ragu Pasta is best served with grilled meat or mature cheese.

Manual leaf removal from the vine

Careful hand thinning of the leaves in the vines allows the bunches to breathe more easily and is optimally exposed to the sun, promoting even ripening and the concentration of aromas.
